This is what's left of what of a shrimp and crab stew I cooked outside this afternoon while enjoying the cool weather. It sure feels nice out, right now.

It smells and taste a whole lot better than I can make It look in a picture. The base is chopped onions, celery, bell pepper, green onions, parsley and garlic sautéed in butter. Once the onions are translucent, I add tomato sauce, tomato paste and a lot of roux. I blend these ingredients well and simmer for as long as I can allowing them to combine and cook. Add the seafood, and its ready to eat in 20 minutes. The sauce simmer time allows for a few whiskeys... :D
