Tupelo, then northern white cedar or juniper as some call it, then basswood. Tupelo is expensive though so I dont carve as much of it as I would like. I usually go with the cedar. I am about to start on an owl for a consignment and plan on using tupelo for it. The nice thing about tupelo is you can get away without hollowing to prevent checking as it wont and its light enough as is.
All of these, except of the hooded merganser are hollowed cedar. The Hoodie is cork
