Seriously, think hitch receiver. The tongue would pull out with a couple pins, you could then slide the tongue into the "back" of the trailer, back it down with the boat nose first. When it's time to load up, put the tongue on the front of the trailer and the boat will load like normal.

Run your winch cable through a block at the back of the trailer and back to your bow eye so you can use the winch to pull the trailer off
