Don't kid yourself Bill, all cervids piss and roll in it. They also copulate and roll in it during the rut. Things on the outside of the hide have no bearing on the flavor unless you touch the outside with your hand and then the meat. I learned your left hand is dirty and is used to hold or pull on hide. The right hand is kept clean and handles only the knife and, when needed, the meat(not your, the game's).
The reason you need to skin goats(antelope) quickly is two things. First is obvious, the temperature issue. Secondly, and more important, are the glands goats have between the hide and inner tissues(meat or fat). It's similar to pigs where they have glands throughout their body, just beneath the hide.
