If all it does is enhance flavor, I'd try leaving it out and see how the jerky turns out.

I don't have a recipe for jerky, that's why I was interested in yours. Suggesting you try it without the MSG was just friendly conversation. If you're telling me that the recipe isn't any good without the MSG, fine, eat whatever you want, but I'll go look for a different recipe if I decide to make my own.

Closest thing to jerky I have a recipe for is smoked salmon/steelhead. It's just a 12-24 hour brine of 1 cup kosher salt and 1 cup brown sugar in a gallon of ice water. After brine rinse, pat dry and allow to stand about 30 minutes. Place on racks, sprinkle dark brown sugar and fresh ground black pepper on top. I use a Big Chief electric smoker. Run about 4 pans of alder chips through it, then when smoke is done wrap with old blanket and let cook for 1-2 hours, depending on the thickness of the fish. Total time in smoker 4-6 hours. If you went longer maybe it would turn to jerky, but I try not to dry it out. At the end I just unplug the smoker and let everything cool down over night, then take fish off the racks cold.

This statement seems to make more sense than anything else I've heard hear. MSG is not a preservative, it is flavor enhancement. Soup manufacturers figured out years ago using it allowed them to use just one chicken in place of five in the manufacturing process.

MSG has been used as a food additive for decades. Over the years, the FDA has received many anecdotal reports of adverse reactions to foods containing MSG. These reactions — known as MSG symptom complex — include:
•Headache
•Flushing
•Sweating
•Facial pressure or tightness
•Numbness, tingling or burning in the face, neck and other areas
•Rapid, fluttering heartbeats (heart palpitations)
•Chest pain
•Nausea
•Weakness

However, researchers have found no definitive evidence of a link between MSG and these symptoms. Researchers acknowledge, though, that a small percentage of people may have short-term reactions to MSG. Symptoms are usually mild and don't require treatment. The only way to prevent a reaction is to avoid foods containing MSG. "

Aspartame. ..if you use it like sugar gives you painful symptoms.

Its not something we use daily.
Every so often will put it on burgers, jerky or a steak.

In the 70's restaurants used it like crazy and were making ppl sick.

They cower and hide when I walk into the chinese restaurant here. Every couple weeks it's like the Rape of Nanking "redux".
