They eat fine.

I've had eider that you'd swear was a prime cut of beef and I've had eider that was nasty.

It all comes down to who is cooking and if they know what they're doing in the kitchen.

Every seaduck I've seen killed is either being put in the wall or it went with the guy who shot it and I have no idea what he did with it.

I'd say the same applies to scoter and squaw.
Every once in awhile I'll find one that has an off taste-but I attribute that to me screwing up and over cooking.

I have a theory about overcooking game. (Hell, it might be scientific fact, I've never bothered to check) Game is far more dense than farm raised meat, because there is virtually no fat. It will hold the heat way longer after its off the grill or out of the oven, because of this density, and keep cooking sitting on the counter. There's no fat to radiate the heat out of it. When I cook birds or deer, when I take them off the heat, they appear almost raw, but after sitting on the counter for 5 minutes, they're just right. If you cook it to the doneness you want, by the time you eat it it'll be overcooked.
