Take your UDS craft to the next level with your own lump charcoal.

I actually have plans to make a shaker in case I have to do an extra long cook.
It's kinda a pita to add coals to a uds during the cook, but since I aspire to have a big ass reverse flow smoker I'm definitely gonna need one.

I've been using 3-5 chunks of mesquite or Cherry to my Acorn every cook and just adding it to the leftover oak lump and wood chunks from previous cooks and it turns the wood chunks into charcoal. I'll bet I haven't added actual lump to that thing for 10+ cooks.

34 years ago I planted an apple orchard. Dwarf trees that my parents never really took care of. The trees are dying or dead so I'm using a lot of apple wood to smoke with. Kinda wish the pear trees would die but last year...omg the pears were so good.

Love Pecan, especially on game. Will smoke the Duck over it and add it to gumbo. Damn good stuff. Mesquite is my go to since we have acres of it.

Same here. I have a small dead apple tree in the side yard, and I cut of pieces each time I smoke something. The wife keeps pestering me to cut it down and replant, but then I'd have to store it somewhere, and it'd be a pain in the ass. If I leave it standing, it's readily available when I want pieces of it, and I don't have to worry about keeping the wood somewhere.

I like the taste of mesquite, but it smells like sweaty armpits while it's smoking.

There's an apricot tree in the yard that leans a bit more each season. If it has a lot of fruit this year...it's a goner and going into the smoker. Been waiting to try that out.

Cherry wood is where it's at for doing pork shoulders. Ill use pecan and hickory for everything else,
Mesquite only when I do brisket and chuck roast

Hmm, we have two cherry trees. Might have to "trim" one. ;)

You should pair up some cedar with that walnut. Couldn't hurt.

I doubt it.

Apple and hickory with some oak for heat.
Your Amish negro cooking methods sound awful.

We used to make Charcoal in Viet Nam by using two jeep mounted Xenon searchlights pointed at each other and holding a couple of 2x4's between them. Put them on IR mode and hit the over drive. Charcoal in about 15 seconds.

It only takes $80 worth of walnuts to get $40 worth of oil.
