Skunked but it was supposed to be a scouting trip anyway. Took some sky buster shots while some guy from Michigan we didn't know was stirring up birds with his boat.

Add some Worcestershire and Franks to that marinade. IMO they do not need to marinate long, I rarely soak them at all. I have a few seasonings I sprinkle on before wrappibg in bacon, main thing is do not overcook, med. rare tops.

BBQ goose is the shit. I only use the legs and thighs. Just like BBQ pulled pork when all done.

Tripod, I wouldn't waste good goose meat on bacon wraps. They do that for duck to try and hide the flavor. Goose will cook up more like beef.
I skin the whole goose sometimes and boil the meat off the bones, wih onions garlic and assorted spices. Then simmer just the meat in a good BBQ sauce and it's just like pulled pork for samiches.Image

We never have any problems eatting goose around my place. Duck on the other hand, can be a hard sell to some who have had that near liver experience.
