Fresh water trout as far as taste is really good. Kinda like bream but less boney. I'm not a big fan of speck trout though, not bad but not great. This time of the year til sept/oct, the specks always seem to be full of worms too.

I think I have been cheated on trout. The only ones I had were full of fat and squishy meat like the stuff you cut off and throw away off of a Flathead. I think it was these fish themselves and not the overall trout family. Too many people eat them and say the are great. But people say that about ducks to and I just find them edible nothing special.

I've had trout from the same wsters that ranged from white, pink, and orange fillets. Have seen the taste vary also.

Do you dump Lea and Perrins Worcestershire sauce into your mashed taters and sourkraute and stir it all up until it turns baby poop gray? If so, well I do it too!

Whenever we go up to PA for the trout opener, we gut them and prop them open with little twigs, then build a little fire and set them around the edge with the cavity facing in. Throw on some green twigs and smoke them for about a half hour while we sip bourbon on the bank. Then pick the chunks of meat out. It may just be the atmosphere, but that's the best way I've had trout.

You guys ever use bread crumbs and crushed ritz crackers in place of the corn meal and flour? It's good for a change of pace!

Yea, I do panko and regular bread crumbs sometimes. I do tempura and beer batters from time to time too. For me though, it's hard to beat southern traditional cornmeal.

Find a creek that gets crazy when it rains hard and fish it. THrow a worm, liver, cut bait or anything out on bottome in that crazy current and you can catch them by the hundreds. Flathead are just a little more finicky and like live bait and deep holes. I personally get most of the Flathead I need by hogging them. I absolutely despise cleaning fish, I would rather clean 4 deer before I cleaned one fish. So if we can catch 8 or 10, 3o to 40 pounders, I clean them and have my fish for the year.

Hoop net, slat trap, trot line, set lines. If you go with the lines bait em with live bait, always seems to work better for me.

I've got a commercial license. Don't really sell anything just keep up to date to run gill nets. They have residential hoop and slat trap here but I love me some gill nets! A fish that is good but highly overlooked is buffalo. Buffalo ribs are awesome.

Some of the Best fish I ever ate was Buffalo. This ole dude took the fish, cut off the head, pulled out the guts and split it top to bottom lengthwise. Then he laid it hide down in a smoker and smoked it with some sort of seasoning. It was like eating flaky white fish out of a leather bowl. Absolutely delicious. There ya go assa, that is something to try on you trash can smoker.
