We buy frozen salmon and smoke it frequently. Being from central-Illinois, we wouldn't know fresh from frozen so we think it's the cat's meow. It's something different for a change. Smoking it is the way to go...every time.
I've heard that it's incredibly stupid to fuck around with a crazy man's head.

Also, I'd add, Spring Chinook and summer steelhead are far and above higher quality than fall Chinook or winter steelhead too.
