Storing wild game

It may surprise some but wild game keeps for years if done right.
1. Pluck n clean your birds.
2. Brine in the sink for 4 hours.
3. Put into zip lock freezer bag. (Suck air out with straw then seal)
4. Finally wrap tightly in freezer paper.

Freezer burn? What is that?

Another way is to freeze your ducks in a milk carton filled with water. Have not tried that.

My grandparents had a lot to do with how I clean and store ducks. They were duck hunters too.
The very first time I went to my grandma's house in Watertown South Dakota for Christmas we had baked duck. I'll never forget it. It was 1965.
My grandfather kept his live decoys in the garage.
I was 4 and forbidden to go anywhere near them ducks.
I cheated of course. :)
