New duck recipe homerun

The redhead duck doesn't really taste all that good. But since about a million winter right out my back door I've been experimenting. My latest creation is redhead duck chili. I took some thick cut bacon and cooked it then cooked the duck meat in the bacon grease. I then chopped up all the bacon and duck meat and placed it in a crock pot. Next I added a can of jalepeno ranch style beans, a can of rotel diced tomotoes with cilantro and 3 cups of water. Next I added poblano, hatch green chili, and jalepeno peppers and a half of a purple onion. Topped it all off with some Mccormicks Chili seasoning and let it cook for 6 hours in a crockpot. When it was done I garnished with fresh cilantro and chopped green onions. It was delicious and my new favorite duck recipe.

Reading this, I just realized that I've never put a bird of any sort in chili. This sounds good, and I'm gonna try it

So it turned out good with goose instead of duck? I like goose better than duck, so hate to "waste" it in chili, but if it's good, I'll certainly give it a whirl.

Yup, very good with goose. I ended up using about 3 large goose breasts, which seemed like a lot at first, but ended up just about right. I prefer duck to goose (don't shoot many divers, mostly mallards), so I prefer duck and the wife needs goose to be masked a little before she enjoys it. She would have loved this, but it was just a touch too hot for her liking (she hates spicy food). On a separate, but not unrelated note, jalapeno juice stays on your fingers a LONG time. Burned the fuck out of my eyes this morning putting my contacts in, which was a full 15 hours and several washings after cutting them up.
