BBQ ribs on a UDS

This is a post of how I make ribs. Others may have their own methods. This way works for me.

Here we have a slab prepared St Louis style, which means the bottom of the slab has had bones trimmed off.

The membrane has been removed.

Next I applied seasoning on the ribs. This is often called a rub.

Now while the ribs are soaking up spices I start the smoker. I use an electric fire starter. I put the fire box in the smoker after this picture was taken and plugged it in.

One advantage of these charcoal is that you don't have to add any wood.

Dont leave the starter in to long. 15 minutes is about right

Notice the lid is askew to promote heat.

210 is about perfect

I leave the slab on for one hour and then turn it.

In another hour, flip it again.

After both sides have had an hour of smoke, I wrap them in tin foil. I thinks more than an hour on both sides is too much.

Repeat the hour-flip routine with the foil on it. Four hours total has worked out to be perfect. Here we go.

They look burnt huh? What you are seeing is caramelized brown sugar that was in my rub. You can actually control the color of the finished product by the type and amount of spices you use.

These ribs were really good!!
