Tamales

Postby aunt betty » Wed May 22, 2013 5:12 pm

How do you do it?
I'd like a recipe for both green and red ones.
I'll be using corn husks and wrapping them up and steaming them in my canner.
Had a Mexican couple as neighbors and they made them using cherry tomatoes from my garden. O M G! Tasty!
They moved before I could get instructions. There was a language barrier. The couldn't speak English and my Spanish is weak.
Help?
I've heard that it's incredibly stupid to fuck around with a crazy man's head.

I'll see if I can find a recipe tomorrow, but they aren't red or green.

My grandma used a pressure cooker. She used to make them for me for my birthday and New Years Day- she'd make TONS of them and freeze them. Unfortunately, she died before she could show me how to make them. I haven't had a tamale since.

I havnt made them, but seen a million of them made. I know the one key ingredient is LARD. From everything Ive heard, its the only way to make a truly great tamale.
