So, what's the consensus? Rub, or marinade, or just smoke? Not sure who's eaten rabbit, but I think it'll be like that. And I love rabbit, but always eat it fried like chicken. Wanted to do something different with Monsieur Go-Fair.

I was leaning toward the rub, also, because rabbit is a lot like a pork loin, only leaner. Not sure about the injection, though,m because I don't know what it tastes like, anyway, and what would complement it.

That, and I don't have any sort of injection kit.

Same here. And I could probably just do that with the go-fair as well, but want to try it on the smoker. I'm doing ribs, so will have a rub already mixed up. I'll do a taste test between the groundhog and the spareribs. If it's good, I may have just hit the jackpot. I'm not too proud to fill my freezer up with groundhogs.

Internet cut and paste, may not be reliable, but casts some doubt on the rodent statement.

Rabbits or bunnies are not rodents. They are actually in a Order called "Lagamorpha", which includes rabbits, hares, and a small South American animal called the pika. All rodents belong to an order called "Rodentia". One of the things that differentiates them is that Lagamorphs (animals in the Lagamorpha Order) from Rodents is the fact that they have an extra pair of small front teeth that sit behind the regular front teeth. Male rodents also have a penile bone, while Lagamorphs do no. Lagamorphs redigest special feces called "cecotropes" which allows them to get the most out of their plant-only diet (which is another difference, Lagamorphs do not naturally eat meat, many rodents do). There are other small skelatal features that distinguish the two groups, as well.

Like I said- rodent. "Lagomorph" is Latin for "shape of a lake", which is why muskrats, who live around lakes, are considered rodents.

Skin it, make sure to get out the little glands in the armpits and hind end. I like it fried and then steamed or in a stew. I haven't smoked one, but I would start out real slow to cook off the grease and fat. I would also use a rub. Don't dry it out and it will be similar to rabbit, but it ain't. A young one should do well on the smoker. I usually soak them in salt water overnight also. Might be good with one of your brine recipes. They are generally a pretty tender meat.:thumbsup:

I may try it with a quick brine (not overnight), then a rub. Although this is violating my Theory of Medium, so I will more than likely shitcan that idea and go with just the rub.

I just got the mother of all eye rolls from the wife when I grabbed the gun and pan, and Layniebug said "I'm coming with you- we're having groundhog for dinner- YES". (That last word was accompanied by a fist pump)
