It was awesome. First time ever skinning a groundhog, and it got a workout. I got the ass out, and then tried to pull it down like, well, any other critter I've ever skinned. Didn't budge. I had to cut the whole thing off. They are some tough bastards. I was skeptical of the knife when it came to bones, though, but it had no problem cutting the sternum, tail, and the pelvis. I was just super careful, since I didn't want to put a very sharp knife full of gopher guts into my palm. The blade is still fine, also. After skinning, gutting, and quartering, I used the same blade to shave off the boogery membrane on the outside of the meat. No problems.

Groundhog and ribs are on the smoker. Neighbor just brought 4 packs of salmon up when he smelled the smoker going, but it's full. When the ribs come off, the salmon will go on. The UDS is getting a workout today.

Pretty good. But I went wrong with the rub. It's not nearly as strong tasting as I thought, at all. So the rub made it taste like beef jerky, only tender. I'll eat it again, but with a simple marinade instead of a rub.

Gramps and I saw a groundhog in his back yard. Told him I had a buddy cooking one today, he said there's not much better than a young tender groundhog, and if that fucker touches his squash he's gonna rearrange its brains with a pellet gun and you could have another.
