Would that be considered a cold smoker? Seems like a lot of the heat would just go straight up into the cooker, but maybe not.

Speaking of cold smokers. I was originally thinking of making a barrel thaat had nothing but racks in it to stack on my BKS. After thinking. What if i did that but left the lid on the bottom one so that the smoke coming out the stack would fill the barrel above. Seems like it would stay plenty cool enough.

Cold smoking is usually done at about 80 degrees. That would definitely get over that.

I've been trying to make a cold smoker but on a small scale, seems like there all larger units and you need space to cool down the smoke.

I've been toying with the idea of stacking charcoal in the basket like toppled dominoes, don't really know how else to explain it. Like this ///////////////////////// with pieces of wood on top of the line. The idea being that I would place a lit coal on one end of the line and cause a chain reaction, lighting the coals one at a time and smoking at what I hope would be "cold" temperatures.

Cold smoking is usually a 65degree type deal, commercial units use refrigeration. My gramp had one where the fire box was in the ground and the stack ran 20' or better underground to an old fridge and he would smoke when weather was right. The ground cooled the smoke. There are some you tubes I have seen of guys running a smoke generator through a cooler full of ice via dryer duct, looks interesting

Run a dryer duct hose of some type, food safe for Doc's sanity, from the UDS drum whatever distance needed to another drum with just racks.

I used to have a glass bong with a blown out part in the neck. Fill that fucker with ice or snow, hot damn I miss college.

Seriously, an industrial sized waterpipe smoker would be ideal for cold smoking.
