Oh shit balls, I forgot all about having 2 bags of this in the fridge. Been a lil over 3 weeks now. I know what I'm doing tomorrow.

Y'all that are making this, take some cooked taters, not overlooked like a baked potato but boiled till they just start to soften, cook your breasts, let them cool as well as the taters and fees them through a coarse plate in your meat grinder, makes mean breakfast hash

Did the half of them with the oven method that Jehler said. They're both good. The oven method holds flavor much better but isn't as tender as simmering. Both ways are hard to beat. The simmering method was so tender that I couldn't cut it, it just fell apart. The pastrami is about an hour away from being pulled off the smoker. Looks good so far.

The pastrami is fucking amazing! I ended up pulling it from the smoker and steaming it in the oven for an hourish. I mean damn this stuff is good.

I'm buying a bear tag this season. If I happen to put a tag on yogi. I'm gonna try this recipe for sure. I've heard corned bear meat is excellent.

It's bruised? Could be that was a goose that hit the ground extra hard and landed on its side hard.
