Fried in butter on a cast iron pan. Boil for 1-2 hours before frying. Season to taste. Doesn't take much. Squirrel is some of the best small game there is IMO.

I like mine boiled and shredded. Put a bunch of poultry seasoning or chicken boullion in the pot, and boil them until the bones start to fall apart. Then I try to pick the meat off and put it in a soup. I say "try" because I generally just end up eating 2/3 of it while I'm picking. Squirrel is delicious.

I used to just bread it and fry it in pieces and eat it like fried chicken. Delicious.

That's a great idea. I love pickle and pimento loaf, hell I love all types of fancy bologna. When I want a quick, good squirrel meal I just rub the whole squirrel down in olive oil season with all sorts of spices and fill the cavity with chopped oinions, garlic, slice of lemon and herbs place on foil on a baking dish and pour wine into the cavity and sinch up the foil with plenty of room for the alcohol to escape and just bake it. Very very good.

In this case its the cajun version. Kinda like tex-mex compared to actual mexican.

If they're anything like jackrabbit, they are quite possibly inedible.

They are horrible. I've eaten (or tried to) just about anything. Dog, live octopus, silkworm larvae, half-developed rotten eggs, clotted ox blood soup, mergansers, you name it.

Jackrabbit was tied for the top with clotted ox blood stew. And it was pretty damn close. If I had a gun pointed at my head, I would probably choose the ox blood over the jackrabbit. It tasted like a 6 day old piss bottle smells.
