I've inly used a dehydrator, but a Canada makes some of the best jerky.

What temperature do you have to get to for "cold " smoking? I think if I insulated the top of the drum and then put a dome lid over that I could smoke it at a pretty cool temp.

less than 80*

Not exactly sure. I can turn my dehydrator on with a thermometer in it and see what the temp is.

I think I had the temp I. The top of my drum down to around 125 when I was playing around with the idea.

There are a bunch of different designs. I made one out of a paint gun and an old cooler.

Flint, you got that idea off Moonshiners didn't you? Will break out my Foxfire book and post pics of STILL PLANS.
Your design looks remarkably like a still.

Flint, I was thinking that if I stacked charcoal briquettes like toppled dominoes ( like this ///////////, each / being a briquette leaning on its neighbor) and placing a lit briquette at one end, a chain reaction would happen, each coal lighting the next as the chain burns one or two at a time, and keeping the temps low. I havent tried yet, but plan to whenever I get the chance.

I've seen them do something similiar. Some get results some dont. They also make a "jig" that you can pack saw dust in that slowly burns, I just feel like there's no enough smoke. I'm gona make the cold smoker like I showed in the diagram. I got plenty of hills and space out at the farm to do this, even a ditch witch to dig the trench. And plenty of free piping, bricks, and a barrel so I'm gona experiment with goose jerky in a "traditional" cold smoker. Hopefully soon.
