Jalapeno Popper Dip

Postby 3legged_lab » Sat Jan 11, 2014 7:43 pm

This is a recipe that my wife found, I brought some to the WCH and red asked for the directions. Figured this would be as good a place as any so it could be found when wanted.

4-6 slices of bacon - cooked and chopped
2 - 8oz cream cheese (softened)
1 cup mayo
1 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
1/4 cup chopped green onions
4-6 jalapenos - chopped (remove seeds unless you like it spicy)

Topping
1 cup crushed Ritz crackers
1/2 stick butter (melted)
1 cup parmesan cheese

Directions
Mix all ingredients (except toppings) and place in an 8x8 pan. Mix topping ingredients in bowl then spread on top. Bake @ 350° for 20-30 minutes or until bubbly.

Sounds good.
Should the bacon be chewy or crunchy?

That dip was amazing but I'm glad I didn't puke that stuff up during Wednesdays drunk fest. That would burn coming up.

Glad you guys liked them. Everything we had was excellent if you ask me. I think I'm actually ready for a break from bacon.

Well if you and Red hadn't made enough duck and sturgeon poppers to feed all of Humboldt, you might still enjoy it! (I'm kind of burned out on bacon too! My wife and kids had bacon and eggs this morning, I had eggs only.)

That's a good deal even for mediocre bacon.
