Ok, I'm going to try and make some boudin tomorrow, using Inda's recipe. Wanted to start this so I have a place to post, and won't forget.

I was gonna make some this year but haven't yet, I've got some frozen duck that needs used. Interested in how yours turns out.

That's what I'm using too. Already wrote it on my shopping list - "1 lb CHICKEN livers". Dont want to fuck up, forget, and get beef liver and ruin it.

Save up the livers from the stuff you kill and use them. Just soak em in a brine like solution before hand.

I would probably have 1/4 pound of duck livers by now. I wouldn't be able to make boudin until 2017.

The dogs get those livers. I try not to eat an animal's poison filter if I can help it.
