Making fried chicken tomorrow. Brine it or not?
I'm leaning towards yes.
I've heard that it's incredibly stupid to fuck around with a crazy man's head.

If you brine it, let me know how it turns out. I don't think I've ever thought to brine chicken I was going to fry, only grill or smoke. Gonna be great, or disgusting. 50/50. It would be nice to have the brine, though, because then you could really get the outside crispy without worrying about drying out the inside.

I've brined whole chickens that we baked. It'll make it juicy. That's for sure.

Just did it. Quart of water. 1/4 cup of salt. Tablespoon of Montreal steak seasonings ( it goes on everything)
Added a couple tablespoons of Louisiana hot sauce for some kick.
Popeyes...look out!

Looking good. The color is browner than usual. Wonder if it's the brining.

I think I should use less salt next time. Its good, but a little salty. The hot sauce is perfect IMO.

In high school I worked for Shakey's Pizza. Their chicken is can best. Why? They marinade it three days in a special brine that's all spicy. I overdid the salt but will figure this out. More spices, less salt next time.

Try sprinkling ground red pepper on it before you dredge or roll in flour. That works real good to make my grilled chicken spicier.

I'll do this brined fried chicken again and try to recall what all was in Shakey's secret marinade.
It came in a bag that said marinade on it. That's all because it was like KFC secret.

Trying to recreate something from 35 years ago without robbing a shakeys.
Their chicken is THAT good.

We used to go to one after my dad's softball games. They'd drink beer and us kids would watch the cartoons and shit they played on the movie screen. Pretty sure that one closed around 1977 or so.
