Smokehouse

I guess this falls under this section. I don't like using the gas smoker and get tired of buying charcoal. So I decided to use all the old bricks I got shoved in the wood shed and start making my own smokehouse with attached brick fire box.

Planing for it to look like this, but a little thinner at only 2.5" wide. Basically the width of 2 blocks and not the end block as you see it in the picture below. I don't need a huge one and I think I could smoke and entire deer in the one I will end up with.

I forgot to come back here on this but finished the smoke house where I can now cook Bologna and snack sticks. I need to figure out how I will make jerky or meat trays still. I also want to research and see if I can slow cook a deer rump like a ham, if that is viable. Haven't deer hunted in 12 years and now I got the urge because of this and my daughter.

I made a deer shoulder and two goose breast into "dried Beef" or chipped beef. My wife hates eating goose unless its heavily marinated jerky and she out right loved this.
