Favorite deer steak recipe

Always looking for new ways to cook it up, what you got?

By far my favorite so far is to marinate in a light steak marinade. Sear it very fast in a hot cast iron skillet. Then throw the skillet in the over at 275 and cook until internal temp of 125. If I'm feeling extra fancy I'll make a balsamic reduction to drizzle over the top.

Damn I just finished lunch but now I'm hungry again! That sounds good.

Make sure you let it rest and cut it on the bias. One of the few cuts of meat that literally melt in your mouth. So damned good.

Add some blue cheese crumbles over your balsamic reduction. Man I'm getting hungry now.

You guys are fancy. I butter up both sides of the steak, and heavily salt each side. Then throw it on the grill, 2 minutes per side, not a second more.

Slice it thin and flour it up like a chicken fried steak, fry in a pan. Season up the flour with seasoning salt, black pepper, garlic powder, and some cayenne pepper.

I like to soak mine in a mixture of Italian and allegro the wrap it in bacon and grill it. It's good that way but better if you add cream cheese and jalapeño before you wrap it in bacon

You guys do too much. I just throw some McCormick grilling steak seasoning on it, and throw them on the grill. Tastes great.

Exactly. That's why I do the butter and salt. Occasionally some Montreal steak seasoning, if I have some.

Jgun brings backstrap to camp that he seals in yoshida's sauce before freezing, I had my reservations but it is pretty dam good.

My favorite is seared in a pan, remove meat an throw in a 350-400 degree oven. Throw some mince onion, garlic, thyme in the pan the a good splash of red wine. Reduce, strain an whisk some cold butter into the sauce to thicken, poor over steak at medium rare-medium

Didn't do this batch in the yoshidas this time. We'll have to cook it your way. Sorry to disappoint. There onions and fresh garlic in the groceries I bought, but you'll have to remember any other spices.
