JEHLERS artisan pizza pecipe.

My grandson loves it so today I'm doing it again.
If you can plan ahead make the dough up way early. I'm doing it at noon.
Pizza time?
Try for around 6.

Let it rise once. Cut in half. It makes two.
It'll fall.
Flour your board, hands, rolling pin, and the dough.
Roll it out then put it onto your peel that's coated with corn meal. Make sure it slides around. Cover with upside down bowl.
The dough will rise again. Give it 45 minutes.
Carefully build the pizza then slide it into the oven.
Plan ahead on that too. Heat oven way hot with pizza stone inside. JEhler uses a big green egg.
I use my oven.
Get it as hot as you can.
Slide pizza in and turn it down to 425.
9 minutes.
Pull pizza and stone both. Set it on a tribet or stove grate
5 minutes and the crust is crunchy. All these little details matter.

My grandson Logan is 11 now.
He was the poster child for Carle Hospital when he was born premie. Weighed barely 1 pound.
He's special. He goes hunting but can't see well enough to shoot. We tried.
Still has fun going. His little brother Elliot is a duck killer I see it in him and how he giggles every time the duck calls come out. He has no clue but it's in him.

Funny story.
Way back...Logan was getting speech therapy.
Still is but the problem was he couldn't be taught to blow thru a drinking straw.
I thought a minute.
Hold my beer. I got out duck calls and handed them over to Logan. Within minutes he was blowing thru a straw.
Crazy but true. His teacher was stunned.

We decided it's brilliant to use garlic salt.
If you've never "proofed" your yeast it should foam up from a teaspoon of honey and a teaspoon of sugar.

Later on perhaps I will explain what the cork and two screws are for. It's a complicated recipe. :fishing:

It's 3:15 so I got the dough. It popped when I removed the bowl.

Cut it in half and rolled out a rough circle.
The dough is very tender and stretchy.

The peel is covered in corn meal.

Fold the dough and put it onto the peel. Re-shape if necessary. Usually it is.
