Creole gumbo

Went to Grassey Lake Hunt Club in 1990 I think.
The church ladies cooked while we hunted.
Gumbo and jambalaya.
I'd never had it. Tried turning it down but a gang of Illinois State troopers convinced me to try some.
I like it a lot so I asked my wife to try making it.
She found this recipe.

We tried it and at the same moment we both said, "This would be better with duck in it".

She's been making it for that long. We serve it over rice.
Been asked to video the entire process as best as I can so the next time we do it I'll try.
For years she wasn't going to share but the right person asked. Hope you all enjoy it when I finally catch her making gumbo again.its not cajun...Creole.

It's really that good and worth sharing why she makes me pick ducks instead of just breasting them out.
Tried it...not the same.

And smoked sausage/andouille instead of ham.

For meat she uses smoked sausage, duck, and shrimp.
When I finally post the video it's how she does it. I've had very little to do with her changing that recipe which she did. Ham sounds no good.
Smoked sausage is perfect imo.
She's changed a few things over the years but not much.
I think deer would be good in it but I don't get much of that.
I've posted her hand written recipe card before.
That'll be phase one of the video.
I put up the original card she used because she put it out there. My wife is proud of herself for perfecting this to where everyone who tries it wants more.
Gary was expecting gumbo but had to settle for ribs.
They were so good he wanted to know about the spices.
He tried nunu's, Tony's, and slap ya mama.
A little bit of Louisiana made it all the way to Schaumburg, IllinoiZ

Yes it does. I sort of had to force him to eat a rib.
He protested and said not hungry. Ate one rib and said now im hungry and had 3 or 4 more.
Asked if I did them like the video.
Yup. I put a little Tony's on then the other spices.
Tony Chacheres is great.
We compared by tasting.
Nunu's is like tomato at the start and heats up.
Tony's is straight heat. Good pepper flavors.
I don't like slap ya mama nearly as much as the other two.
Good stuff I'll never quit preaching about it now. :lol:
