Pancetta

Probably speeled it wrong but whatever.
The Italians really take their bacon seriously.
Anybody eat the stuff?
Rachel Ray?
Assateague has or had the hots for her.
This process is wild.

Bacon hangs in socks for how long?
Uhhh...not sure I should eat it.

No wonder it's not on our shopping list. $45 for 2.5 pounds.

Do they have samples at the end of the meat case isle? Probably only way I’ll get to try.

Doubtful.
I know I've had it in something but not sure what.
Maybe have to try some camping.
I'll just go into the grocery store in Lynn, Arkansas and ask for pancetta, Canadian bacon, and English muffins.
They'll laugh their ass off.
The meat section has hamburger and a big giant hunk of bologna.
They'll make you a sammich.
Crazy times...
