You are probably going to notice no taste difference at all. I have some Vermont and a ton from Canada. NY and VT are identical and the Canadian is just a tad thicker. Its on the top shelf of the fridge. Borderline frozen. Perfect for dipping a popsicle stick in.

I actually had it in my Gor-met coffee too with a splash of 50/50. I ended up making about 2 gallons just from the 4 trees I tapped in my yard. I keep a squirt bottle off it in my fridge for easy dispensing on ice cream, coffee, hot cakes, or whatever i want.

Blonde syrup does not have less flavor, it has a different flavor, you heathens have an unrefined tongue, I'll leave it at that. I prefer the syrup you start getting about the second week in and even that from year to year can vary greatly

New York Grade A Light Amber or Vermont Fancy — the lightest of the three classifications has a mild, delicate flavor

Medium Amber — a bit darker with a fuller flavor
