Cutco is awesome and right there with Forschner for filleting. Seriously.

We use Cutco. I haven't been around the world when it comes to fillet knives but those things are straight nasty. You can cut a man in half with one in under 3 seconds. If you don't own one, its worth owning.

Maybe I'll make a vid when the meat shows up.

Not to de-rail, but I really like the Mora knife I bought, and they make fillet knifes, too.
