Tried alittle something different yesterday. Very lightly rubbed the chickens down with olive oil before I put the rub on. Made the skin just alittle extra crispy which everyone here loved

Truer words were never written. What I think is important in a wife after 20 years is WAY different than what I was looking for at 28.

Boy did I get lucky, I tried my damndest to end up with the wrong kind of woman and still managed to luck out.

Questions to ask myself if I am ever single again and dating-

1) Are they high maintenance and bitchy? Psycho?
2) Are they WORKERS or coasters?
3) Do they have self directed career goals?
4) Do they enjoy fighting and creating a new crisis to solve every day?

Low maintenance= GOOD
High maintenance= Hose and dispose

I had this goose quartered and sitting in the lime brine since friday. I just pulled off the neck and damn near had a stroke. This is the most tender, tastiest goose I've ever cooked. I'm thinking I'll snack on the wings next time I open the smoker in an hour or so. There is also a moose roast my neighbor put in there. We'll see how that turns out. I think its time for a beer before I start the pasta salad.

Yeah the acid in the lime juice has been working its magic for two days. Its not falling apart, which is to be expected for a tough old goose, but this is awefully good. Have you tried with lime yet, or are you sticking to cider vinegar?

haven't tried with lime. How exactly you make your brine?

I use Assas recipe but use lime juice instead of vinegar. I'm not the biggest fan of cider vinegar, so this works better for me.So far it works for chicken and goose. I'm thinking it would make a pretty good pork roast

If you got the room buy the whole brisket, aka packer. If you buy the flat you get charged out the rear for it and miss out on burnt ends. I go to my local butcher and buy the whole brisket and then have them separate the point and the flat since my webber bullet smoker can't fit the whole thing on one grate. I put the point on two hours earlier, then the flat so I can serve burnt ends and the flat at the same time.

Firing up the drum super early though for three Boston butts and some chicken breasts.
