Couldn't find a gumbo recipe on folse's website so I went with one I found on the DU website.

That doesn't look to far off from the one I used. I was afraid of scorching the roux so I killed the heat a little early I think. I was kinda blonde and tasted a little "floury".

Yup, needs more. You can really smell when it turns over. Med to med high heat and don't stop stirring.

I saw one of those in the google search, but figured the micro would be frowned upon by true coonasses. Guess I could always buy it at the grocery store too.

Best option to get the recipe right and then make the roux. Once you've done it a few times it gets easy but still takes time. Be careful when you take it off it keeps cooking until it cools, I've had some great looking roux when I pulled it off heat ruin a whole pot of gumbo when I added it in and it was burned from sitting. That was using swamp's recipe which adds the roux in at the end instead of adding everything to it at the beginning, makes it a little more challenging to get the roux right.
