Speaking of squirrels, look up "the white squirrels of Olney, Illinois".
It's a freak thing but they've had white squirrels there a very long time.
I've heard that it's incredibly stupid to fuck around with a crazy man's head.

The Wikipedia story of how Olney got white squirrels is quite interesting.

I hope not. I could pick them off all day with a sling shot in my yard...

Delicious you say...are they similar to any other game (besides chicken)?

I think you have red squirrels or some call them pine squirrels. They're a about 1/4 to 1/2 the size of a Fox squirrel. If you don't have nut trees or acorns you aren't going to have Fox squirrels.

In MI they have Black Squirrels. Never seen anything like it when I moved there.

just looked it up, you're right about the red squirrel. we have two native species, the red and the northern flying squirrel, but we also have two exotic species, the fox and the eastern grey. according to FWP, the fox squirrel population is out of control.

I think they are pretty different from rabbit.
I think they have kinda a sweet steak taste, but it's pretty unique. Best taste of any small game out there IMO.
Boil them for a hour or 2 before you cook though. They are pretty tough.

Just happens that the black phase dominates most of the Michigan grey squirrel population. That's why a lot of people think they are their own species.

Boil whole squirrel until you can easily stab a fork into its back legs. Cut the legs and backstraps off and then fry legs in butter in a cast iron pan for about 10-15min...throw the backstraps and other scraps in at the end for a couple min.
We usually just salt and pepper the water for boiling. You can put in whatever you want though. I like a little onion powder in it for something different sometimes.

apparently i am missing something. those little fuckers are the hardest animal i have ever cleaned! tough skinned little fuckers and that skin seems to be welded onto the meat most of the time....


if you have an easy way, i would love to hear it. i never did get any instruction on cleaning squirrels, just nail their back feet to a plank and skin 'em like a deer then carve them up best i can without the bastards slipping around and getting cut myself.

Oh, hell no.

Cut them under the tail and up the back legs, circle the legs. Then stand on the tail, and pull the hind legs. Peels right off, then cut the neck and scoop out the guts and done. Should take less than a minute.

Here you go. This is what I do, but I slit up the back of the legs and then circle the feet. That way it all comes off in one pull, but this was the closest I could find.

I do it like he does it. I'm going to try it your way next time though.
The trick is to make sure you don't make a cut into the meat along the back or you will tear a lot of meat off the squirrel when you pull.
