My dad used to work on oil rigs when he was working for Exxon. He said they had some of the best Cajun food he's ever eaten on one rig. Gotta have good food to make it less miserable I guess.

Kinda hard for me to say, other members of the jack family. A solid style thick flaky meat, aj could prob explain it better. Definitely not a white flaky fish.

No, it's bot a pink or orange or whatever kind, but I'm no expert with trout. Maybe tuna, but I've never had fresh tuna, so can't say for sure.
