Apparently someone my wife works with is giving her some a few slabs of pork belly. Anyone know a way to cook it? Never even had it before besides bacon.

Wow, I wish I had questions like this. If its mostly meat id score the skin side, season it liberally and fry it hot in cast iron mostly skin side. Just flip and cook the meat side for a bit to ensure full done. Actually probably start it out slow to render some fat to cook in. Then hot and fast. If its mostly fat I have no idea.

Explore the internet. Jehler is out of gas. Check out how french cooks use it. They do big time because it is prized. You can get it going tonight if its not just a blob of fat. Wheres the scrapple master AT?

ive never done it, id say 4 days or so, I have done it lots with pork loins to make Canadian bacon and 4 days does it. I think Alton brown did it on his show?
