I had almost the same thing last week, except try this, slice the taters into 1/4" slices, toss with olive oil, chili powder and cumin(season to your taste), grill along with the kitchen. They get sort of a crispy tater chip crust to them.

It was my first time doing it at home, and the learning curve is steep, the last couple looks much better than the first couple.

I used Jasmine rice. No idea if there's anything better, but ma said that's the stickiest rice she knew of. Turned out pretty good I thought, nice and tacky.

Fish was a big whack of Ahi that I bought from the grocer. I would have done some salmon as well but didn't have time to thaw any out before hors d'oeuvres were slated to hit the table.

Added a little green onion, carrot, and red bell pepper. I would have spiced them up but I was cooking for guests and there was wasbi there if any one wanted to ratchet up the heat. If I could do it all over again, a little piece of cilantro would fit nicely.

Tried one or two rolls with kale, because I love kale, but it didn't really do much for it.


For the veggie only rolls I used the same veggies plus a string bean or two, and thin little line of cream cheese to hold it all together.

There is a rice out there just for sushi. It's sushi rice. Seriously. It is a shorter grain and works much better. Also mix some mirin, rice vinegar and sugar together in a bowl and pour it over the rice. Makes it stick better. Also try dipping a pre-cut roll in tempura batter then rolling it in panko and frying it.

I heard about this sushi rice, I'll probably try it next time, but in any case the jasmine worked out.

I didn't want to pittle around with frying any of this stuff. People were impressed enough with what they got.

If you don't have any sushi rice, you should be able to get Botan or Kokuho Rose in darn near any Walmart, and certainly in any little Asian grocery. Heck, we have two of them here. The key is to have a rice cooker though. Best rice out there. The family and I eat rice about twice a week. Love that shit. Occasionally I'll just have a couple big ass bowls of kimchi and rice. Which sounds very good right now. Dammit. I don't really know a thing about sushi, but I do know my rice.

Gotcha. I make it prety often. I'll find some old pics and take some next time I do. Maybe make a little video. I did one with the outside wrapped in prosciutto and pan fried it, and one with bacon and lump crab on top then baked they were really good. Not normal but really good.

We has azan-foo mahket here in Point, but back home its a long drive. The rice turned out fine on the stovetop, but that was my biggest concern. I'll probably buy a ricecooker when I get a real life.

We got a few asian markets here b/c of Barksdale AFB. My wife has a rice cooker, it makes it much easier.
