It was my first time doing it at home, and the learning curve is steep, the last couple looks much better than the first couple.
I used Jasmine rice. No idea if there's anything better, but ma said that's the stickiest rice she knew of. Turned out pretty good I thought, nice and tacky.
Fish was a big whack of Ahi that I bought from the grocer. I would have done some salmon as well but didn't have time to thaw any out before hors d'oeuvres were slated to hit the table.
Added a little green onion, carrot, and red bell pepper. I would have spiced them up but I was cooking for guests and there was wasbi there if any one wanted to ratchet up the heat. If I could do it all over again, a little piece of cilantro would fit nicely.
Tried one or two rolls with kale, because I love kale, but it didn't really do much for it.
For the veggie only rolls I used the same veggies plus a string bean or two, and thin little line of cream cheese to hold it all together.
