I've been using this pizza pan as a heat diffuser on a rack that's abt 9 inches above my fire basket. Y'all think this would work to put the heat diffuser pizza pan directly on top of my basket and then cook in that lower rack? I've got three racks of ribs and then abt ten chicken thighs to cook tomorrow.
holy shit man do you cook for the whole neighborhood every time you fire that thing up?
I cook for friends and family every time. I figure the charcoal to food cooked ratio is kinda excessive if I only cook for me and the wife. I guess I'm kinda assateagueing it as not to waste fuel. I've had such good response to the food I've made that I'm considering going into a side business maybe taking orders for Boston butts or ribs and charging X amount for them. Turkeys at thanksgiving.. Etc.

Picked up the barrel today, got the firebox built, and got two grates. The barrel had palm oil in it...used to make soap. I washed it out with bleach, simple green, and dawn dish soap. Anything else I need to do before I put the parts in and burn it good?

I would go ahead and cut my holes for the valves in the bottom and set a raging garbage fire in there to make sure you get everything out.

friend of mine does small parties or weddings with his trash cans. His don't have racks. He hangs everything. You can def cook more food that way. Might wanna consider that Flintie. Or pick up another trash can and put rods and hooks in that one

Or ribs. You'd think after a few hours the weight would rip them apart.

he'll throw a rack on for ribs and such. Just talked to him. But he prefers to hang everything he can

Hey fuck you, that boat is still awesome. For having less than about 2300 into it and the motor was like 1250!

I kept it at 250 all day and then let it go to 300 in the last hour. I did the 321 method. That temp elevation at the end works great to firm them back up after they come out of the foil. Ribs were awesome tonight.
