Yep, they're not cheap. Luckily the small burner on my stove on its lowest setting keeps around 135-140 when pan is full.

think that's how swamp does it? Have seen several homemade deal on the Internet using a crock pot, some kind of hi accuracy temp control and an aquarium pump. I think having the water moving is a big deal

Pretty sure that's what Swamp does. I think he adds ice cubes to bring the temp down when necessary...

I'm gonna test my crock pot on "warm", see what the temp holds at. You guys said it's impossible to overcook also, right? If kept at 135.
