Just put a deer shoulder on for the first time. A little thicker than ribs, but no fat, so in gonna go 45/45/45/45. When I put it in foil, I may add a couple slices of fatback. Haven't decided yet.

Could've used a little more brown sugar in the rub I think. Didn't caramelize very well, I think because there wasn't enough fat to mix with it. Still very good, though.

It was very, very tender, which was surprising to me, particularly because it was a shoulder from an old doe. Next deer I shoot, I'm going to keep a big roast whole (which I never do- they all get cut into steaks) and try that one.

And I do think I remember his posts in that. I'll ask him.
