yep, in the oven though, I used the au jus drippings from the meat to boil the rice, why its so dark, was kinda rich but damed good.

should mention that I did a chuck roast in the smoker Labor Day weekend like you were bragging about, was fucking awesome, want to kind of combine the two now, love smoked meat on tacos like that.

the smoked chuck roast is a versatile cut of meat, I got a lot of ideas for that one. I want a deli slicer for the hot n fast cooked one but I'm gona try a longer cook low and slow and pull it next time just for the hell of it.

i cooked mine to the point of pulling it, was like very good, I covered it with foil to keep it moist which softens the bark a little more than I like but damn, hard to complain about

Sort of. I have a big slab of smoked fatback. Sliced off about 12 pieces of that and layered it over the goose halves. Double-smoked fatback crisped on a goose is fucking delicious also, by the way.

I meant to pull it at 135, but it was 145-150 when I was taking it off. I was in a panic, because the temp went way up at the end, and nothing I could do. But I shouldn't have panicked, because it was very, very good. If I could manage to only take it to 135, I think I'd sit and eat the whole thing.


**I should add a disclaimer- it was a very young, small goose, which is why I decided to do it. I can't imagine a big one would be any different, because that brine tends to be the great equalizer. But an older goose may need to be watched much more closely.
