Amen and I never stress a temp swing. Even a 50 degree swing lasting up to 45 mins. Controlling temps that closely is a waste of effort.

Gonna have to revive this thread.
Stay tuned for more this Saturday.
Just moved all this to the fridge to start thawing. There's a rack of back ribs, full packer brisket, and then a half brisket.
Also gona be picking up two Boston butts.

Gonna bust it out for thanksgiving and through the weekend. Still having trouble keeping the temp up. Reckon I need to go ahead and take the cap off the only covered vent to get more flow?

I would say yes, and use natural lump coal, it gets hotter faster and burns cleaner with a better flavor.
You cooking the bird in there for thanksgiving?
I'm probably doing two or three of them depending on who wants one. My grandparents want one for the big family shindig and the inlaws want a bone in breast.

I just used up the last of my charcoal on sunday. I might try the lump because mine has a hard time getting up to 250 lately.
