LASAGNA!

Postby jehler » Sat Mar 09, 2013 6:05 pm

Betty put the bug in my head, have one in the oven

What do you all put in a lasagna? This one has Italian sausage, salami, pepperoni, mozzarella, a cheese mix of ricotta eggs and Parmesan with sauce

Have put roast beef, pork, and ham in before but that's about it

The one you described sounds good. I've done it with deer and it makes a good bolognese. I've done some with bechamel and it's good to but I do those with chicken or other white meat birds and it's pretty good. You ever had pasta-laya?

Italian sausage, beef, cottage cheese, and the usual extras. A ton of mozzarella, and lately I've been using vodka sauce over the regular.

I don't make it traditional style but I make somethign like it with link sausage. Make an beschamel sauce but spice it up with cajun flavors. I warm the milk up and put onion, celery, bell pepper, bay leaf, thyme, 2 cloves, half a head of garlic, cayenne, paprika, black peppercorns and slat in the milk while it warms up. Strain the spices and veggies out of the milk after it warms up and the flavors incorporate. Make a typical beschamel roux and mix it into the milk and add cheese. Usually pepper jack for this recipe. Fry up some sliced and cubed link sausage in a skillet, remove the sausage and in the same skillet, sautee some onions, celery, bell pepper, bay leaves, thyme, cayenne, salt pepper, paprika, and some other seasonings. Mix the sauce and the sausage/veggies together and serve over fettuccine.

I got a recipe for a seafood lasagna I've been wanting to try. It has shrimp and scallops for the meat with a white sauce in it.

That sounds outstanding.

And if anyone makes a white sauce joke, I'll kill them.

I'll eat it, but I've never tasted a memorable lasagna. Must not be my thing.

Bar clam, cod or flounder, lobster, shrimp, scallops, sauteed onions, garlic, I use cream of mushroom or alfredo for the sauce, lots of mozzerella. It tastes horrible.

Everytime I hear clam I think of how fun you say clamming is where you are....makes me want to drive down and do it. I love clams, of almost every variety.
I used to go to Maine back and high school and get clam and lobster there, but it wasn't nearly as fun as how you do it.

A bar clam is a big brown clam that we catch in 4-5 feet in pure saltwater, not found in bays or estuaries. The minimum size we are allowed to keep is 4 inches and I've seen them the size of dinner plates.

They taste better than razor clams, have more meat and are a hell of a lot easier to catch :D

We alsp have quahogs and softshells, but bar clams taste the best. What kinds do you have?

When we go out, we usually get cherry stones, little necks, and quahogs. Pretty good mix of them all. Our minimum is 1" thick, measured at the hinge.
